Who doesn't like pepper chicken. It should be in everyone's top food likes. And it was there for a long time in my wishlist of 'Recipes-to try'. Last week, I tried making it and it turned out great.
1 medium sized onion
1 medium sized tomato
1 ts ginger garlic paste
Few curry leaf
1 ts pepper powder (can add more if needed)
1 ts fennel powder
1/4 ts garam masala
1/2 ts chicken masala
3 ts oil
For marination
1 ts pepper powder
1/4 ts turmeric powder
3 ts lemon juice
For marination

Pre-step
Combine the chicken pieces with the ingredients to marinate and keep in the refrigerator for a minimum of half an hour. I usually keep the marinated container in the freezer for 15 min and then transfer the container to the lower section. This way the marination sets in very well.
Preparation
Take a flat bottomed pan. Add oil. The more oil you add, the better taste you get. fry onions till they are slightly golden brown. Add ginger garlic paste and the curry leaves. More curry leaves enhances the taste of this dish. Add tomato and fry till its completely cooked and oil oozes out. I usually prefer making a paste of tomato in the blender and add them since it reduces the cooking time. Now add pepper powder, fennel powder and garam masala. Freshly ground pepper and fennel powder gives a nice aroma and enhances the taste. Add water if needed and bring it to boil. And wait till oil oozes out or until the gravy is completely dry. I prefer having it dry.
