Chicken fried rice

Ingredients
250 gm boneless chicken cut into small cubes
2 cups of finely chopped vegetables of your choice (may include carrot, beans, potato, cabbage)
2 cups rice
2 spring onions, finely chopped
1 ts pepper
3 ts corn flour
3 egg
1 medium sized onion
1 ts ginger garlic paste
1 ts soy sauce
3/4 ts vinegar
1 1/2 ts red chilli sauce
Oil as per need

Pre-step
Boil rice with enough salt and water.

Preparation
  1. Make a paste of cornflour, egg, salt and pepper. Dip chicken cubes into them.
  2. Add oil in kadai. Once they are hot, deep fry the chicken pieces and keep them aside.
  3. In the same kadai fry onion. Add ginger garlic paste and stir fry the vegetables for 5-10 minutes. Keep them aside
  4. Beat eggs with salt and handful of spring onions. In the same kadai fry them.
  5. Now combine the chicken, vegetables and egg in the kadai along with boiled rice. Mix them well.
  6. Add soy sauce, chilli sauce and vinegar. Mix well so that the flavours get incorporated into the rice. Mix gently so as not to break the rice.
  7. Garnish with chopped spring onions.
