Oven grilled fish ( Indian style)

A healthy, no guilt way to enjoy your favorite fish. We in home absolutely love it and prepare it often.


Ingredients

1 whole fish/ 1 regular sized salmon fillet / 3-4 fish steak (cutlets) ( use any firm fish variety)

For the marinade
1 ts chicken/ fish masala
2 ts sambar powder
1/2 ts chilli powder
1tbs kasuri methi (crushed)
1 tbs lemon juice
One small butter cube ( melted)/ 2 ts olive oil
Salt to taste

Preparation

- Preheat oven to 210-230 c in grill mode ( fan forced better) for 10 min. 

- Clean and wash the fish in running water. If using fillets, cut them into your desired uniform size and thickness. This ensures even cooking. 
- Mix and rub the fish pieces with the marinade. Let it rest for a min of 15 minutes or even longer.

- Line the baking tray with aluminium foil. If needed, use a little oil spray over it.
- Line the fish pieces.

- Keep the tray in the preheated oven on the top most rack.
- Let the fish grill on one side for 5-8 minutes. Keep a watchful eye. Cooking time varies depending on thickness and type of fish used.
- Turn over the fish piece gently with a tong or spatula. And allow this side to get grilled for 5-8 min more.
- Turn over again if you feel the other side needs to be grilled for a little more time.
- When both sides look roasted and grilled enough, switch off oven. Let the fish rest in oven for 5 min.

Serve them hot with mint chutney/ roasted veggies/ coleslaw salad. 

We in home love to accompany this with dalia porridge for a yummy light dinner.
