Unlike the traditional method of coconut rice preparation, this is a different one with the whole spices added. It has a lovely refreshing taste and is a fabulous dish to have with any chicken curry/ korma.
Ingredients
1 cup basmati rice
1/3 cup grated coconut
1 medium sized onion (cubed)
2 green chillies
Few curry leaves
Few cashews
Few raisins
1 small piece cinnamon, 2 cloves, 1 cardamon
Oil and ghee as per need
Preparation
- Cook basmati rice with enough salt and water.
- Meanwhile heat oil and ghee in a small pan. Add cinnamon, cloves and cardamon. Add cashews and allow them to brown a little. Add raisins and toss until they puff up. Then add the cubed onion pieces, green chillies and curry leaves and just saute for few seconds. Now add the grated coconut and keep frying them until they turn light brownish. Switch off flame.
- Spread the cooked basmati rice on a wide plate/ bowl and allow them to cool. Then add the coconut masala prepared above. Mix them gently and evenly.
