Brinjal fry/ varuval

This is a very tasty and lip-smacking South Indian style simple brinjal fry with least ingredients which pairs up well with all kinds of rice. When pairing with roti, you can also add cubes of boiled potato along with this. 

Ingredients
10-15 small brinjals (cut lenghtwise)/ any medium sized long brinjal variety
1 medium sized onion
1 ts mustard seed, 1/2 ts urad dal, 1 tbs chana dal
1/4 ts hing
2 red chilli
1 ts sambar powder
1/4 ts tumeric powder, 1/4 ts chilli powder, 1 ts coriander powder (optional)
Few curry leaves
Sesame oil as per need

Preparation

- Heat enough oil in a kadai. (Brinjal preparations require a bit extra oil than those for normal dishes)
- Temper hot oil with mustard seed, urad dal, chana dal, hing, red chilli and curry leaves.
- Quickly add the chopped onion and fry until they turn translucent.
- Now lower the flame to simmer and quickly add all the spice powders. 
- Give a quick toss and quickly add the cut brinjal pieces. Add enough salt.
- Toss everything in high flame for 2 minutes.
- Then cook covered in simmer for around 10-15 min until the brinjal cooks well. Never add water. Stir often so that brinjal doesn't stick to the pan.

Enjoy hot with steamed rice and any of your favorite curry.
