I am sure most should be damn crazy over idli podi. When they are so easy to make in home, why rely on store bought powders.
VERSION 1 - USING URAD DAL
Ingredients
½ cup whole urad dal (white)
10 red chilli
½ ts hing
2 ts salt
½ cup dried curry leaf (can use more or less as per your liking)
1 ts sesame oil
Preparation
- In a kadai add oil. Once hot add urad dal and fry until its slightly golden brown. It may take a while. Keep tossing repeatedly (so that it gets evenly fried on all sides) in high flame for 5 minutes. Reduce the flame and toss it for an extra 2-3 minutes. Switch off flame now.
- Add red chilli, hing, curry leaf and salt and toss it well so that it gets little fried in the existing heat of the kadai itself.
- Allow it to cool for a while and grind it well to form a fine powder.
VERSION 2 - USING ROASTED GRAM/ PORIKADALAI
Ingredients
½ cup roasted gram/ porikadali
5 red chilli
½ ts hing
1 ts salt
Preparation
There’s no roasting involved. Grind everything together into a fine powder.
