Bread pizza cup

An incredibly delicious way to serve bread, the pizza way with your favorite toppings. The toasty bread cups encases all the good stuff inside. Hence this is no mess and kids will absolutely adore this innovative style. A delicious weekend breakfast treat for your whole family as well.

You can prepare them in small pie pans or muffin trays. Small bread cups done in mini muffin pans will serve as a good party appetiser. 


Ingredients
3 wholemeal thick bread slices
2 eggs
1 small sized onion ( finely chopped)
1 capsicum ( finely chopped)
3 ts pizza sauce
3 tbs grated mixed cheese
1 ts dry chili flakes
Pinch of dry herbs
Salt as needed
Handful of chopped coriander leaves

Variety of other vegetables like cherry tomatoes, grated carrot, mushroom, spinach, sweet corn can be added. They can be added raw or sautéed slightly in butter and then added to the egg mixture. Can also add olives and jalapeño for extra punch. 

Paneer is another lovely addition. Shredded cooked meat can also be added. 

Preparation

Spray or coat muffin tray or small pie pan with olive oil or butter.

Trim the edges of the bread. Roll the bread slices with a chapati roller to stretch them out. Place and line them on the greased tray. 

In a 180 c preheated oven, place the bread tray for just under 3 minutes to make them slight toasty. This step will avoid making the bread slices soggy when the egg mixture is added. 

Meanwhile, in a bowl add chopped onion, chopped capsicum, chilli flakes, dry herbs, salt, chopped coriander leaves and eggs. Beat them well.

Take the bread tray out. Spoon out little pizza sauce over them. Then add the well beaten egg mixture. Top them with grated cheese. 

Immediately place the tray in the oven and bake them for 15-20 minutes until egg mixture is well cooked and cheese is well melted. 

Serve warm.
