This vegetable milagu pirattal/ varuval recipe is so tasty with mor kuzhambu.
2 cups mixed vegetables of your choice
( I used cauliflower, potato, carrot, soya beans)
( Don't use mushy vegetables)
( Use beans/ legumes like soya beans, butter beans, chickpeas, kala chana etc for variety)
1 small sized onion ( chopped fine)
1 large tomato
1 ts ginger garlic paste
Milagu pirattal masala
1 tbs peppercorn
1 ts cumin seed
1 ts fennel seed
3-4 red chillies
1 very small cinnamon stick
1 clove
1 star anise
Grind the above with as little water as possible to form a very smooth paste
Preparation
- Pressure cook soya beans or any beans/ legume of your choice for 2 whistles. Release air immediately and then add the chopped vegetables. Pressure cook for just a whistle and release air immediately, else vegetables may become mushy.
- Grind the pepper masala and keep it aside
- Heat enough oil in a kadai. Add chopped onions and fry until translucent. Add ginger garlic paste and sauté for a minute. Add the ground masala paste and sauté in medium flame for 3-4 minutes. Add chopped tomatoes and cook until mushy. Add the cooked bean vegetable mixture without its water. Add necessary salt. Mix everything evenly. Cook in high flame for 1-2 minutes. Then cook in simmer uncovered ( The vegetable bean mixture is already half cooked beforehand. So if you cook them covered now, the mixture will only become mushy and not become dry) for around 10 minutes tossing periodically until the mixture becomes completely dry.
