These cute looking maida biscuits are a favorite among all. Enjoy munching them alone or mix them with spicy mixture. A delightful tea time snack !
500 gm maida
300 gm sugar (powdered)
75-100 gm ghee/ dalda
3-4 crushed cardamom pods
In cup measurements ( approximate)
1 cup maida
3/4 cup sugar
1/5 cup ghee/ dalda
2-3 crushed cardamom pods
Preparation
- In a big bowl add maida, powdered sugar and ghee/ dalda. Mix everything evenly. Then add needed water and make a smooth non sticky dough.
- Take medium sized balls from the dough and roll them thick with a Chapati roller. Slice the rolled maida into thin strips. Take each strip out and cut them into small diamonds. Repeat the process for the rest of the dough. Spread all the cut diamonds on a big towel.
- Allow the diamonds to air dry for a minimum of 30 minutes to even upto 2 hours. The more it dries the better.
- Heat oil in a kadai. Keep the flame medium/ constant throughout the cooking process. Take batches of diamonds and fry them until golden. But let them too darkened or browned.
- The diamonds will look soft even after fried. Spread the fried diamonds onto a wide plate. They will become crisp and hard after it cools down.
- Store them in an airtight container only after it cools down.
