This is not a recipe post as such, but just to tell you how we in my mom's place enjoy having this coconut milk rice particularly during summers.
This is not rice cooked in coconut milk but coconut milk mixed with rice. We would have seen kids loving paal saadham. This coconut milk rice in one such way to include the goodness of unadulterated coconut milk which adults will equally enjoy.
Add 1/2 ts of sugar and generous amount of coconut milk to rice. Mix well. Relish it. We in home enjoy having this with any veg gravy and any seasonal mango/ pickle. This is a simple and healthy once a weekday lunch during summers.
