I love making parathas for their simplicity and versatality. Aloo paratha is one of my ever favorite paratha. And here is how I make them.
Ingredients
3-4 medium sized potatoes
1 ts ajwain/ carom seed
1/4 ts turmeric powder, 1/2 ts chilli powder, 2 ts coriander powder, 1 ts cumin powder, 1/2 ts punjabi garam masala
Lots of finely chopped coriander leave
Preparation
- Microwave or pressure cook potatoes until they are very soft and mushy.
- After they are cool enough to handle mash them with a spoon, fork or a potato masher. Add ajwain, all the spice powders and coriander leaves. Give them an even mix.
- Divide them into required number of balls.
Aloo stuffing for your paratha is now ready. Prepare aloo parathas the way you do your other regular parathas.
