Adai Idli is a good variation from your regular adai dosa. Adai Idli is not done in most homes but when I tried making them recently, it turned out so good. Since adai batter is not fermented, you have the addtion of eno fruit salt to aerate the batter. The resulting idli's turned out very fluffy and light just like the fermented ones. Because of the lightness, you can gobble on more idli's than the adai dosa, with which you'll feel full after just one or two of them.
Coconut chutney, tomato chutney or even just idli podi goes well with this idli.

After the batter is prepared, take the required amount needed for idli's on a seperate container. Add 1-2 ts (or more) of eno fruit salt as required. Add cold water over it. It foams up and becomes frothy. Now mix the batter well. The batter will now be aerated enough and are ready to prepare your idli's.
