Pattani saadam (Peas rice) is the South Indian version of peas pulao. It is a very tasty and healthy rice which can be done in minutes. Any spicy chicken gravy will go fantastic with this rice.
The recipe for Malli saadam (Coriander-mint rice) will be the same as the given recipe minus the peas. Malli saadam is one prominent dish in marriage feasts in the recent days. For this dish, you can increase the amount of mint and coriander leaves to give a more greenish look to the rice.
Ingredients
1 cup basmati rice
1/2 cup frozen peas
1 small onion (thinly sliced)
1/3 cup thick curd
1 ts fennel seed
1 bay leaf
To grind
1 small onion
1 ts ginger garlic paste
2 sprigs of mint leaves
5-6 sprigs of coriander leaves
2 tbs grated coconut
1 ts kasa kasa
2 cloves
Grind all the above together with very little water
Preparation
- Soak basmati rice for a minimum of 15 minutes.
- Grind the masala paste mentioned above.
- Heat oil in a pressure cooker. Temper hot oil with fennel seed and bay leaf.
- Add thinly sliced onions and fry till they turn translucent.
- Add the ground paste and fry them in low flame until oil seperates or until the masala comes together leaving the sides of the cooker.
- Add the green peas.
- Add the thick curd and mix everything well. Add sufficient salt. Fry in low flame for around 5 minutes until the mixture is devoid of all moisture.
- Now add the soaked rice. Add needed salt and water. Mix well.
- Close the cooker and pressure cook for 3 whisltes.
- Once done, fluff and mix them gently without breaking the grains of the rice.
