Mixed veg and baked beans pasta

Yummy nutritious baked beans pasta - my sons favorite. He loves to have pasta any time of the day. Crazy bunch of young gen - can have pasta anytime, anywhere. But the added bonus is that he doesn't say no to any vegetables when added along with pasta.

Ingredients
1 cup pasta (any shape of your choice) (preferably of durum wheat pasta)
1-2 cups finely chopped vegetable mix (onion, green capsicum, red capsicum, carrot, mushroom)
2 garlic cloves (finely chopped or grated)
1 small tin of baked beans (preferably in tomato sauce)
2 medium tomatoes (pureed) (blanched and skin removed)
1 tbs tomato paste (leggos)/ regular tomato ketchup (for intensity of flavor and color)
1 ts mixed Italian herbs
1 ts red chilli flakes
1 tbs olive oil
Small block of cheddar cheese

Preparation

- Bring a large pot of water to a rolling boil. Add pasta and cook according to packet instructions. After cooked drain water and add few drops of oil. Toss to coat all pasta so that they don't stick to each other.  
- Add olive oil in a pan. Once they turn hot add finely chopped garlic and the vegetable mix. Combine and toss everything together in high flame for 2 minutes. 
- Add the can of baked beans, pureed tomato, tomato paste, mixed herbs, chilli flakes and sufficient salt. Mix evenly and cook in low to medium flame for a good 5 minutes. 
- Add the cooked pasta. Mix thoroughly. Cook in medium flame for 2-3 minutes.

Yummy nutritious pasta is ready to be served. While still hot spoon out needed into serving plates. Grate cheese over the hot pasta. 

It tastes excellent even when cold.
