Italian sausage soup

Light, refreshing and a hearty soup. This soup can be had as a light filling meal by itself as it is loaded with the goodness of meat, vegetables, beans/ legumes, greens and even pasta.

Ingredients
3 long chicken sausage rolls (preferably Italian flavored)/ 1/2 cup regular mince
1/2 cup vegetable mix (cubed/ sliced) (onion, carrot, zucchini, sweat corn)
1 small tin baked beans (preferably in tomato sauce)
Handful of spinach leaves (roughly torn)
Small handful of shell pasta
3 garlic cloves (sliced)
1-2 cup chicken broth
Pinch of Italian herbs
Pinch of chilli flakes
Salt as per need
1 tbs olive oil

Preparation

If using stock cubes; bring 1-2 cups of water to a vigorous boil, add stock cubes and allow them to dissolve to get a clear stock liquid.

Cook pasta according to packet instructions. After cooked drain water and add few splashes of oil to keep them separate. 

Add little olive oil in a stock pot. Tear the casing of the sausage and add the sausage mince to the hot oil. Toss them for a good 2-3 minutes until they get evenly browned. Now add sliced garlic and the vegetable mix with sufficient salt. Toss for a minute. Add the chicken broth, canned beans, mixed herbs and chilli flakes. Mix gently. Allow the soup to boil. Now add the spinach leaves. Simmer for 10-15 minutes until the chicken gets cooked and the vegetables become tender. Finally add the cooked pasta.
