Muttai Kari Varuval | Egg balls in pepper gravy

Spicy egg balls prepared in appe pan and then sauteed along with a yummylicious dry pepper gravy. A must try ! 


Ingredients

For egg balls
3 eggs
1 medium sized onion ( finely chopped)
2 green chillies ( finely chopped)
Few chopped curry leaves and coriander leaves
Dash of crushed black pepper
Salt as per need

For dry pepper gravy
2 medium sized onion ( finely chopped)
1 medium sized tomato ( puréed)
1 ts ginger garlic paste
1/4 ts turmeric powder, 1/2 ts chilli powder, 1 ts coriander powder
2 tbs freshly powdered peppercorns, cumin seed, fennel seed
2 tbs coconut paste 
Few chopped curry leaves and coriander leaves

Preparation

Beat eggs along with chopped onions, chopped green chillies, pepper powder, chopped curry leaves, coriander leaves and needed salt. Heat appe pan on medium heat. Add 1/4 ts oil in each of the holes. Spoon out the egg mixture onto the appe holes. Allow them to cook on medium flame. Flip over after 2 min and cook the other side for a minute. Take the prepared balls onto a bowl.

Heat enough oil in a kadai. Add good amount of chopped onions with little salt. Cook until they change color. Add ginger garlic paste and sauté for a minute. Add broken curry leaves. Add the puréed tomatoes, turmeric powder, chilli powder and coriander powder with needed salt. Add the coconut paste. Cook in medium flame until the mixture becomes completely dry. (Watery gravy will make the egg balls soggy). Now add the freshly powdered mix of peppercorn, cumin seed and fennel seed. Also add the prepared egg balls. Mix evenly without breaking the balls. Cook in simmer for few minutes. Garnish with chopped coriander leaves.
