Quick chana biryani

Chana biryani is a quick one pot dish and a healthy tasty lunch box idea. It is amazing with just some raita and chips.

Ingredients
1 cup basmati rice
1 cup chana ( soaked overnight)
1 medium sized onion ( thinly sliced)
2 large tomatoes
1 tbs freshly grated ginger garlic
Few mint leaves
2 green chillies
1 tbs chana masala/ kitchen king masala/ biryani masala 
1 cup thick coconut milk + 1 cup water
Oil and salt as needed

For garnishing (optional)
Few chopped coriander leaves
Squeeze of half lemon

Ingredients

- Wash and soak basmati rice in water for a minimum of 15 minutes or even longer. 
- Pressure cook chana for 1 whistle in high and for 2 whistles in simmer. Allow air to release by itself.
- Grind mint leaves, green chillies, ginger and garlic coarsely without any water. 
- Add required oil in a kadai. Add thinly sliced onions and fry until they turn translucent. Add the ground mixture and sauté for a minute. Add in chopped tomatoes and necessary salt. Cook until tomatoes become mushy. Add the choice of your spice powder. Keep flame in simmer and cook until oil seperates from the mixture. Add the cooked chana ( keeping the chana water aside), mix well and let them cook together for a while for the chana to absorb the flavours of the masala.
- In a pressure cooker add the soaked basmati rice, prepared masala, coconut milk and chana boiled water. Add necessary salt and mix well. Pressure cook for 1 whistle in high and 2 whistles in medium
- After cooked garnish with coriander leaves and little lemon squeeze. Mix gently without breaking grains of rice.
