Ragi bhairi was a childhood delight for us. It has been a very long time since I had this. Being in my mom's place for a few months now, I am getting to taste all the homemade goodies made by her. The last few posts are and the upcoming posts for a few days will be straight from my mom's kitchen. I asked her for ragi bhairi and she immediately made it for the evening snack.  It is such a simple to make healthy snack sans unhealthy APFlour/ butter/ white sugar. Kids and adults too will love the nutty sugary taste and the dense chewy texture of the bhairi. 

Ingredients
1 cup ragi flour
1 cup broken/ powdered palm jaggery
2 cups water
1/2 cup thin coconut slices
Pinch of cardamom powder (optional)
Pure ghee as per need

Preparation

- Add the broken/ powdered palm jaggery in a kadai. Add 2 cups of water. Let the liquid come to a boil and allow the palm jaggery to dissolve completely. Switch off stove. Let the liquid cool down. Then strain them to remove impurities if any.
- To the strained jaggery liquid, add the ragi flour and mix evenly. The consistency should be little thin than that of the dosa batter. Add more/ less of jaggery liquid/ water or ragi flour as necessary. Add the coconut pieces also and give an even mix.
- Heat a dosa pan. After it is heated enough, reduce the flame to simmer and add spoonfuls of the batter and spread a little to form a small pancake shape. It may not be possible to spread out this batter too much. Add ghee around the edges of the pancake and allow it to cook for 1-2 minutes on one side. Flip over and cook for a further 2 minutes on the other side. Keep the flame in simmer throughout the cooking process.
