My kid loves to have bread and bun in any form. His favourite go-to grab to fill his hungry stomach is the no-fuss PBJ sandwich. When I am too lazy to cook something for his lunch, I even pack the PBJ sandwich for his lunchbox - with an egg, some fruits and a snack. He doesn't complain. He actually likes it - simple, tasty and filling.
Many times, I make mayo sandwich too for his lunch - with just grated carrot and/or boiled sweetcorn and blanched spinach. With just an extra touch of some salt, cracked pepper and lemon juice, it tastes yum.
My recent experiment with fillings is paneer and cheese. The below recipe is a breeze to make, satisfies your spice cravings, is cheesy and tastes absolutely delicious. Can replace paneer with tofu, mix veg, chicken or even scrambled eggs. Great for a lunch box or for a quick healthy snack anytime of the day. Great for picnics too.
Ingredients (makes 2 six inch subs)
1/2 cup cubed paneer
1 medium sized onion (chopped)
1 medium sized tomato (deseeded and chopped)
1/4 cup chopped capsicum
1 ts jeera
1/4 ts turmeric powder
1/4 ts ginger garlic paste
1/4 ts ginger garlic paste
1/2 ts chilli sauce (sriracha)
1 ts tomato sauce
1/2 ts pav bhaji masala
1 tbs oil
Salt as per need
Required amount of grated cheese (preferably mixed variety)
2 buns/ bread rolls/ hot dog rolls
Preparation
Heat oil in a pan. Add jeera and allow to crackle. Add cubed panner and toss for 2-3 minutes until they are slightly crisp. Add ginger-garlic paste, turmeric powder, chopped onion, tomato, capsicum and needed salt. Toss for a minute. Then add pav bhaji masala, chilli sauce and tomato sauce. Cook for 3 more minutes until masala is well cooked.
Allow the cooked paneer masala to cool down.
Slit open the buns. Add required spoonfuls of cooked panner inside the buns. Top with grated cheese. Microwave the paneer and cheese filled bun for a minute for the cheese to melt.
Spicy, cheesy paneer sandwich is now ready!
