Baked version of the regular pan fried french toast. It is so easy to put together, mess free and oil-less. You can assemble everything (even previous night), throw into the oven and let the oven do the cooking while the fresh coffee is getting brewed and while you finish your other essential chores. Ideal for weekend breakfast and in one go, a big batch of breakfast for the whole family is sorted.
Ingredients
4 bread slices
1 tbs olive oil
For savory egg mix
3 large sized eggs
1/3 cup milk
1 tbs mustard sauce (optional)
1 small sized onion (thinly sliced)
5 cherry tomatoes (quartered)
1 small cheese cube (grated) (optional)
Salt and pepper to taste
Handful of finely chopped coriander leaves
Whisk all together until well combined
Preparation
Grease a baking tray with oil/ butter. Place one line of bread. Pour half of the egg mixture. Place a second line of bread. Pour remaining of the egg mix evenly over all bread slices. Press the bread slices gently with a fork so that they get coated and get soaked in the egg mixture well. Drizzle little oil over the top.
Bake in the 200 c preheated oven for 30-40 minutes until well set and browned at the top.
