Udith | Sourashtra black urad dal sundal

Udith is a very famous and most preferred evening snack of Sourashtrians. It is not only very nutritive but very tasty too.

This sundal is unique and quite different from the preparation of other sundal. The black urad dal is boiled, seasoned with salt and garnished with fried shallots, green chillies and roasted gram idli podi. Slurp! :)

Ingredients
1 cup black urad dal
Roasted gram idli podi (Recipe here
4-5 shallots (thinly sliced)
2-3 green chillies (finely chopped)

Preparation

Onion, green chilli mix

- Add little oil in a small kadai. Once hot add the shallots and fry until translucent. Next add in the green chillies. After both are fried enough add 1/4 cup water and cook in medium flame for a minute. (The addition of water is to soften the shallots)

- Pressure cook black urad dal with just enough water to submerge them. Pressure cook for a whistle in high flame and for two whistles in simmer. (Don't add salt at this stage)
- After cooked drain water in a colander. Add salt to taste to the cooked black urad dal. Toss well.
- Spoon out the required in a serving plate. Sprinkle the onion green chilli mixture. Also sprinkle the idli podi.

    Please try to use simple English, Why are you stressing 'Shallots' instead of Small Onion. by the by the 'Black Urad dal' is known as 'Vigna mungo' in English.
