This is a delicious and simple to make egg roast. For those who hate to have the boiled eggs, this is a tasty twist to the regular and boring boiled eggs. And this is my favourite way of having them too.
2 hard boiled eggs
Generous amount of finely chopped onion
2 green chillies (slit opened)
3 garlic cloves (finely chopped)
2 ts rasam powder (add more if needed)
1 ts pepper powder (optional)
Few curry leaves
Generous amount of oil

Preparation
Making hard boiled eggs
- Place eggs in a small pot. (If you are boiling large number of eggs, make sure to put them in a single layer in the pot)
- Add enough cold water to the pot so that the eggs are covered completely with water.
- Add in a pinch of salt.
- Bring the water to a boil on a medium flame.
- Once it reaches boiling point, switch off stove and cover the pot.
- Let it sit covered for about 15 minutes.
- Once the eggs are cool enough to handle, crack and peel the shells.
Making egg roast
- Add generous amount of oil in a kadai.
- Once hot add generous amount of finely chopped onions. Fry them until they turn brownish and a bit crunchy.
- Add chopped garlic and slit green chillies. Mix and fry them for a few seconds
- Add rasam powder to the above and give a quick toss. Be careful not to burn the spice powder.
- Immediately add in the cut boiled eggs. Roast them in high flame for a few minutes until the eggs turn slightly brownish and roasted.
- Test for the taste and add more pepper powder if needed.
