This is a very famous sweet snack of Sourastrians. Frequently made during most of the special occasions. It can be considered a kind of sweet vada/ bonda. There will be no limit to the amount you'll gobble them up :)

Ingredients
¾ cup maida
¼ cup rava
1 cup sugar (can be reduced)
Pinch of baking soda (optional)
½ ts cardamom powder
Few broken cashews/ raisins/ nuts (optional)

Preparation

Add ½ cup water to rava and set it aside for 10 min. This step makes rava little smooth and not too coarse. If the rava is coarse it may give a porous structure on the outside of the puri.

Now mix the maida, sugar and baking powder with the rava. Add more water if necessary. The consistency should be that of a dosa batter.

If the sugar is mixed, the puri should be made immediately or else the batter may become too runny. So mix sugar and baking powder at the time you want to prepare your puri.

Mix cardamom powder and fried cashews.

Heat oil in a kadai. Let it heat on a medium flame. Take the mix in a round spoon and pour gently over the oil. Wait for few minutes until the bottom gets cooked and becomes slight golden brown. (If its fried too much then the puri will become too hard). Then flip over and wait for the other side to cook as well.

It should be crisp on the outside and spongy on the inside.
