Masala Egg Noodles (Indian style)

Quick, yummy Indian style masala egg noodles without the need for fancy store-bought sauces!

Ideal as a quick lunch box fix. Can also be prepared with pasta and leftover roti.

Ingredients
2 pack noodles
2 eggs
1 small sized onion
2 medium sized tomato
1 tbs  tomato sauce
1 ts ginger garlic paste
1 ts jeera
1/4 ts turmeric powder
1/2 ts chilli powder
1 ts pav bhaji masala/ garam masala
1 ts kasuri methi
Pinch of Italian mixed herbs (optional)
3 tbs oil

Preparation

Cook noodles according to packet instructions. Drain and add few drops of oil. Toss to coat. Keep aside.

Heat oil in a kadai. Add jeera to hot oil. After they splutter, add onion and cook till translucent. Add ginger garlic paste and turmeric powder. Then add chopped tomato with enough salt. Cook till tomato becomes mushy. Then add tomato sauce, chilli powder and pav bhaji masala. Cook till oil separates from the masala mix. Take the masala mix to the side of the kadai. Break open the eggs in the center of the kadai. Cook for 1 - 2 minutes until egg is cooked. Add crushed kauri methi and Italian herbs. Then add the cooked noodles. Toss gently and evenly for the egg masala mix to coat the noodles.
