Radish paratha

A very yummy nutritious paratha. This paratha doesn't have any of the offensive smell of the radish. This paratha tastes very yummy with tomato thokku.


Ingredients
1 cup wheat flour 
1/2 cup (approx) water for kneading
Oil/ butter/ ghee for smearing

For stuffing
1 long radish
1 ts cumin seed 
1/2 ts red chilli flakes
1 ts coriander powder
1 ts amchoor powder
Lots of coriander leaves

Preparation

- Peel the skin of radish and then grate them medium thick. Keep them in a plate, add little salt and let it rest for 15 minutes. Then squeeze out the excess moisture from the radish pressing them tightly with both your palms. Use the squeezed water to knead the dough.  

- Knead wheat flour with water into a smooth dough. Finally knead and coat with a little oil to form a soft dough. Keep covered a container or in a damp cloth for a minimum of 15 min.

- Heat little oil in a flat pan. Once hot add the radish into it and just saute for a while just to get rid of a little of its raw smell (If you find its taste still offensive, then saute with a little turmeric powder) Its not needed to cook them. Radish needs to have a good crunch for a tasty mooli paratha.

- Take the sauteed radish in a plate. Mix in the cumin seed, red chilli flakes, coriander powder, amchoor powder and lots of finely chopped coriander leaves. Divide them into needed portions.

Your radish stuffing is ready to be used for preparing your paratha.
