Quick mushroom fried rice

Mushroom fried rice is a quick and healthy dish whick kids and adults will like alike. You can enjoy this heartily with any Indo Chinese gravies. If nothing, enjoy this even with a simple sunny side up omlette. This is a quick lunch box recipe and goes for a quick dinner option too. Egg, vegetable and chicken fried rice can also be done in the same way.

Ingredients
2 cups sliced mushrooms
1 cup basmati rice
1 medium sized onion (finely chopped) & few chopped white bulbs of spring onion
3 garlic cloves (very finely grated)
1 ts soya sauce
1 tbs chilli sauce (red/ green)/ 3 slit green chillies
1 ts vinegar
2 ts pepper powder
Handful of spring onions
Sesame oil as per need

Preparation

- Cook basmati rice with little salt in rice cooke until they are nice fluffy. Spread them on a wide plate and allow to cool.
- Heat oil in a kadai. Add finely chopped onion and chopped white bulbs of the spring onion. Add a little salt and fry till they turn translucent. 
- Add finely rated garlic and saute for a few seconds.
- Add sliced mushrooms and saute everything together for a minute in high flame. Add salt and little pepper powder and keep cooking them in medium flame until mushroom leaves all its moisture and becomes dry. It should also become a little blackish.
- Add soya sauce, chilli sauce and vinegar. Give a quick stir in high flame.
- Now either add the cooked mushrooms to the rice. Also add the spring onions. Add more pepper powder if needed. Give a gentle and even mix. 
- Now transfer the mixed rice to the kadai or rice cooker and warm it for few minutes for the flavors to set in well.
- It tastes best when had hot.
